Bayou Verde Sauce
-1/2 C Seasoned rice vinegar
-1/2 C Unseasoned rice vinegar
-1/4 C Fish sauce
-Juice of 1 lime
-2 Large shallots, finely minced
-1/2 of one jalepeno, finely minced
-1/2 bunch cilantro finely minced, some stems included
-1/2 bunch parsley finely minced, some stems included
-1 cup finely minced carrots
Prepare all ingredients and mix them together. For the carrots I like to use a peeler to create long ribbons of carrot and then finely chop those to ensure you get small uniform pieces. Put a small amount on fresh cold raw oysters, make sure you get some of the crispy veggies not just the sauce. Enjoy!
